Celebrate the summer season with four new cocktails from The Botanist Gin and Selfridges.

 

The Urban Botanist

Harry Gordon’s Bar – The Urban Botanist

The Botanist Gin infused with bay leaf, star anise & thyme, with lemon juice and ginger ale

50ml The Botanist Gin infused with bay leaf, star anise and thyme

25ml lemon juice

Top up with ginger ale

Method

  1. Shake The Botanist Gin infusion with lemon juice
  2. Pour into a high-ball glass
  3. Top with ginger ale

The Botanist Wild Cherry

 

The Corner Restaurant and Champagne Bar – The Botanist Wild Cherry

The Botanist Gin infused with lavender, rosemary, long peppercorn & pink peppercorn, with elderflower cordial, lemon juice, muddled black cherries, ginger ale

25ml The Botanist Gin infused with lavender, rosemary, black peppercorn and pink peppercorn

17.5ml The Botanist Gin

15ml elderflower cordial

1/2 lemon, juice

4 x black cherries, muddled

Top up with ginger ale

Method

  1. Muddle cherries
  2. Shake The Botanist Gin infusion with The Botanist Gin, elderflower cordial, lemon juice and muddled cherries
  3. Pour into a rocks glass
  4. Top with ginger ale

The Botanist Fizz

Aubaine – The Botanist Fizz

The Botanist Gin infused with lavender, with honey fresh lemon juice and Prosecco

25ml The Botanist Gin infused with lavender

10ml honey

10ml fresh lemon juice

Top up with Prosecco

Method

  1. Dry shake The Botanist Gin infusion
  2. Stir honey and lemon juice until honey dissolves well
  3. Add ice and shake well
  4. Pour into a Champagne glass
  5. Top with Prosecco

The Botanist Garden

Forest on the Roof – The Botanist Garden

The Botanist Gin infused with goji berry, with lime juice, lemon juice, cream, egg white, goji syrup and mescal

50ml The Botanist Gin infused with goji berry

10ml lime juice

10ml lemon juice

25ml cream

1 x egg, white

10ml goji syrup

10ml mescal

Method

  1. Separate egg white
  2. Shake The Botanist Gin infusion with lime juice, lemon juice, cream, egg white, goji syrup and mescal
  3. Pour into a cocktail glass

 

The collaboration began when The Botanist led Selfridges’ bartenders on a foraging expedition through Hampstead Heath to harvest a selection of wild ingredients. These were then infused with The Botanist Gin to create delicious and innovative syrups.

Available for a limited time only, each cocktail from the Selfridges collaboration brings to life the heritage of The Botanist, whose 22 local herbs and flowers are foraged on Islay and augmented by nine classic gin botanicals. They will be available exclusively at Selfridges’ restaurants: Harry Gordon’s Bar, The Corner Restaurant and Champagne Bar, Aubaine and Selfridges’ rooftop restaurant, Forest.

Available in Selfridges’ bars until the end of July.
